Roasting
Our coffee is freshly roasted to order. This means we begin roasting after receiving your order.

Some beans may degased before dispatch.

Resting
The peak flavor of our coffee is 10-21days after roasting, so we recommend letting our coffees rest for at least 10-14 days before brewing. 

Based on our roasting style, most coffees will already taste great just a few days after roasting, but they will develop even greater intensity and complexity after 10-21 days. The coffees will maintain their vibrancy for at least 2 months before gradually losing some of their character due to oxidation.
